The carefully selected grapes undergo soft pressing with minimal skin contact, developing the wine's characteristic pale salmon-pink hue with distinctive onion-skin highlights. Fermentation proceeds at precisely controlled temperatures in stainless steel, preserving vibrant fruit expression and energetic character.

The entire fermentation process takes place in stainless steel vessels, deliberately avoiding oak influence to maintain the pristine aromatic purity and refreshing vibrancy of Sangiovese. A subsequent 4-month aging on fine lees builds subtle complexity and textural balance without compromising freshness.

The wine presents a delicate pink color with brilliant clarity that immediately catches the eye. Goccia BRUT is born from a soft pressing of Sangiovese grapes, manually harvested from our organic vineyards located in Panzano in Chianti. The vinification follows the Martinotti (or Charmat) method, which involves a second fermentation in an autoclave for about 4 months, allowing the primary aromas of the fruit to remain intact and giving the characteristic bubbles. This approach differs from the production of our Tuscan red wines such as 1427 Chianti Classico Riserva , which instead requires aging in wood. The Sommaruga family personally supervises every phase of production, maintaining the commitment to organic farming that has characterized our estate since 1998.

Goccia BRUT is ideal for outdoor aperitifs during the summer, celebrations and convivial moments. It is perfect for summer toasts, events in the garden or by the pool, thanks to its freshness and its ability to accompany appetizers and finger food. It is also an excellent choice to conclude a tasting of Tuscan wines with a lively and fruity note. For an even richer experience, you can pair it with dishes prepared during one of our cooking classes , where you will learn to cook traditional Tuscan recipes.
